I love waffles. My husband loves waffles. Our daughter has already acquired a taste for waffles. So every now and then on the weekend I like to whip us up a batch. I’m all for quick and easy when it comes to brunch foods, I don’t want to have to get up early to make a meal that is meant to be eaten at a leisurely hour. This is where this recipe comes in. It’s so simple. No separating eggs, no real exact measurements of the liquids and the ability to add as many tasty additions as you like.
1 cup Flour
50g/2oz Melted Butter
1 Teaspoon Baking Powder
1/4 Cup Water
1/2 cup Milk
Give it a mix and you’re ready to cook. If it doesn’t seem runny enough, add some more milk or water until you get your desired consistency. They become crispier with a higher water content, I quite like mine a little crispy, so always chuck in some extra water.
Here are some that I whipped up the other morning. I added chocolate chips to these ones and served them with sliced banana, blueberries, a drizzle of maple syrup and a good dollop of Greek yoghurt. Delish!
Other options to mix into the batter include banana, berries, cinnamon, bacon bits, seeds, nuts… the possibilities are endless!
